Tiivistelmä
Opinnäytetyön tavoitteena oli helpottaa ärtyneen suolen oireyhtymän ruokavaliohoidoksi kehitettyä FODMAP-ruokavaliota noudattavien asiakkaiden ravintolaruokailua sekä tuoda ravintoloihin enemmän tietoa ja ymmärrystä FODMAP-ruokavaliota noudattavista asiakkaista. Ravintoloiden asiakaskunta samalla laajenisi ja tulos paranisi. Tutkimus rajattiin asiakkaan näkökulmaan.
Opinnäytetyö toteutettiin teemahaastatteluina FODMAP-ruokavaliota noudattaville henkilöille heidän ravintolatottumuksistaan. Haastateltavia tässä tutkimuksessa oli yhteensä kuusi kolmessa haastattelussa.
Tutkimuksen mukaan FODMAP-ruokavaliota noudattavien olisi tärkeää kertoa avoimemmin ruokavaliostaan ja sen syistä ravintolahenkilökunnalle, jotta ruokavalio otettaisiin vakavammin huomioon. Ravintolaan etukäteen yhteyttä ottaminen parantaisi FODMAP-ruokavaliota noudattavien palvelua ja saatu ruoka olisi parempaa. Haastatteluissa toivottiin ensisijaisesti vastuuta sairauksien hoitoon liittyvien ruokavalioiden opetuksesta ravintola-alan oppilaitoksissa. Haastatteluista nousseiden ratkaisuehdotusten mukaan ravintolat helpottaisivat FODMAP-ruokavaliota noudattavien ruokailua mahdollisimman puhtailla ja erillään olevilla raaka-aineilla sekä ruokien sisältöjen että erikoisruokavalioiden paremmalla merkitsemisellä.
Tutkimuksen tulosten pohjalta laadittiin arkkityyppi Liisa FODMAP-ruokavaliota noudattavasta asiakkaasta. Tutkimuksen tuloksia verrattiin vuonna 2017 Helsingin Sanomissa julkaistun artikkelin vinkkeihin, jotka helpottivat FODMAP-ruokavaliota noudattavan asiakkaan ruokailua ravintolassa. The aim of the thesis was to facilitate the restaurant dining of those customers following FODMAP diet developed for irritable bowel syndrome, as well as to provide more knowledge and understanding of FODMAP dietary requirements of customers to restaurants. The customer base of the restaurants would thereby also increase and improve the result. The study was focused on the client’s perspective.
The thesis was conducted as theme interviews with people following FODMAP diet about their restaurant habits. There was a total of six interviewees in this study in three interviews.
According to the study, it would be important for FODMAP dieters to communicate more openly about their diet and the reasons behind it to restaurant staff in order to be taken more seriously. Contacting the restaurant in advance would improve the service for those following FODMAP diet and also thus the received food would be better. Primarily, it was hoped in the interviews that there would be responsibility for teaching disease-related diets in restaurant schools. According to the solutions suggested in the interviews, restaurants would facilitate FODMAP dieters’ dining by using the cleanest and separate ingredients, and better labelling of both food contents and special diets.
Based on the results of the study, the archetype of a customer following FODMAP diet, Liisa, was created. The results of the study were compared with the tips of an article published in Helsingin Sanomat in 2017, which made it easier for a customer who follows FODMAP diet to eat in a restaurant.
