Tiivistelmä
Opinnäytetyön tarkoituksena oli selvittää, onko mahdollisuutta toteuttaa ravintola Wanha Pehtoorin ja Helsingin kaupungin Haltialan tilalle yhteinen kestävä tulevaisuus.
Tutkimuksella lähdettiin selvittämään olisiko mahdollista, että ravintola voisi jatkossa tulla käyttämään tilan tuotteita, sekä onko mahdollista muuttaa Helsingin kaupungin tilaa luo- mutilaksi ja samalla myös hyödyntää tilaa opetuskäytössä. Aiheen tutkimisesta toivottiin olevan myös konkreettista hyötyä kestävän kehityksen edistämiselle.
Toteutustapa oli kvalitatiivinen, ja haastattelu toteutettiin puolistrukturoidulla haastatte- lulla. Tulokset osoittivat, että Haltialan tilaa ei kannata muuttaa luomutilaksi. Tutkimuksen mukaan tilan tuotteiden kehittäminen, ekosysteemipalveluiden tarjottavuus ja myynti olisi sekä tilan että ravintolan kannalta hyödyllistä. EU direktiivin uusien säännösten mukaan tilan osittain luomulla toimiminen ei ole enää mahdollista, vaan tilan täytyisi muuttua ker- ralla kokonaan luomuksi. The purpose of the thesis was to study whether it would be possible to implement a more sustainable future between the restaurant Wanha Pehtoori and the Haltiala farm, which is owned by the city of Helsinki.
The aim of the study was to investigate the possibility of using the products of the farm in the restaurant Wanha Pehtoori and to study the prospect of converting the farm to organ- ic production. The study also analyzes the potentiality of the farm utilized to an education- al farm for groups and students. The aspiration was to gain concrete benefits in improving the sustainable development.
The study used qualitative methods and a half-structured interview was conducted. The results suggested that it would not be beneficial to convert Haltiala farm to an organic one. According to the study, improving the products of the farm and providing and retailing of ecosystem services, would be beneficial for both the farm and the restaurant. However, under the new EU directive regulations, it is no longer possible to run a partly organic farm, but instead the whole farm has to be converted to organic farming.
