Tiivistelmä
Opinnäytetyön tavoitteena oli kehittää jo markkinoilla olevan luomukaurapohjaisen jäätelön rakenteesta pehmeämpää ja kevyempää, jolloin sen lusikoitavuus suoraan pakkasesta otettuna helpottuu.
Opinnäytetyössä perehdyttiin teoriassa jäätelön valmistusprosessiin sekä kaurajäätelössä käytettyjen raaka-aineiden ominaisuuksiin. Käytännön tuotekehitysosuudessa testattiin ensin kuutta reseptiä, joista valittiin aistinvaraisen arvioinnin avulla kaksi miellyttävintä ja pehmeintä vaihtoehtoa. Parhaaksi valittuja reseptejä lähdettiin jatkokehittämään ja yhdistämään keskenään. Toisessa testiajossa testattiin neljää reseptiä ja näistä valittiin taas kaksi parasta vaihtoehtoa jatkoon. Kolmannessa testiajossa kehitettiin vielä kaksi reseptiä, joista toinen oli lopulta raadin suosikki.
Testattujen uusien raaka-aineiden ja reseptien ansiosta saatiin aikaiseksi pehmeä rakenteinen jäätelö, jota oli helppo lusikoida. Pehmeyttä ei saavutettu ilmavuutta lisäämällä, vaan käyttämällä jäätymispistettä alentavia ja proteiinipitoisempia raaka-aineita. Koe-erien aikana syntyi myös kiinnostus jatkokehittää pehmeyttä ja ilmavuutta lisäävää raaka-aineinnovaatiota, jota ei kuitenkaan ole vielä mahdollista käyttää teollisen mittakaavaan valmistuksessa. The aim of the thesis was to develop a softer and lighter structure for the company's organic oat-based ice cream, making it easier to spoon when freezer out of the frost.
As part of the thesis project the ice cream manufacturing process and the properties of the raw materials used in oat ice cream were studied, as well as and their individual effect as materials. In practice six different recipes were first ested that were evaluated based on an organoleptic evaluation method. This resulted in finding out which two samples were the test and could be developed further. The development of the product then continued with four new recipe based on the findings from the first test. A result two final recipe were created which was presented to the jury that picked a favorite one.
The raw materials tested during the three test batches produced a soft by structured ice cream that was easy to spoon. Softness was not achieved by increasing the airiness but instead by using raw materials that lower the freezing point and also an increased protein content helped. There was also an interest in further development of raw material innovation that improves softness and airiness, but it is not yet possible to use in industrial mitigation.
