Tiivistelmä
Opinnäytetyön tavoitteena oli tutkia Jyväskylän ammattikorkeakoulun restonomiopintojen työharjoittelukäytänteitä. Samalla selvitettiin, voiko työn opinnollistamisen metodeilla vaikuttaa työharjoittelun kiinnostavuuteen ja tehdä siitä samalla elinkeinoa kehittävää. Tutkimus toteutettiin monimenetelmäisesti, eli siinä käytettiin kahta laadullista ja yhtä määrällistä tutkimusta. Aineisto kerättiin opiskelijoiden ryhmähaastattelulla, työnantajien puhelinhaastatteluilla ja opiskelijoiden verkkokyselyllä. Tutkimuksessa keskityttiin työn opinnollistamisen työvälineistä aiemman osaamisen tunnistamiseen, tavoitteiden asettamiseen, raportointiin ja kehitystehtävän onnistumiseen. Saadut tulokset osoittivat, että työn opinnollistamisen työvälineitä käytetään jo jossain määrin restonomin työharjoittelussa. Tätä tapahtuu hyväksilukumenettelyssä, toteutuneissa kehitystehtävissä ja yleensä osaamista tunnistetaan ja tunnustetaan työhaastatteluissa ja työtehtäviä määritellessä. Tavoitteiden asettamista ja raportointia tulisi kehittää restonomin työharjoittelussa, koska opiskelijat haluavat työharjoittelussaan enemmän tavoitteellisuutta ja vastuuta. Työnantajat kokivat, että työharjoittelun raportointi ja tavoitteiden asettaminen ovat työharjoittelua kehittäviä käytänteitä. Opiskelijan havainnoiman kehitystehtävän tai -projektin tulisi olla osa työharjoittelua, jolloin työharjoittelu on sekä opiskelijalle että työnantajalle motivoivaa, inspiroivaa ja kehittävää. Tutkimuksessa saatiin tietoa työnantajien ja opiskelijoiden toiveista työharjoittelukäytänteisiin. Ammattikorkeakoulun restonomiopinnoissa tarvitaan työelämäläheisempää koulutusta. Työn opinnollistamisesta löytyy kehittäviä työvälineitä, joita tulisi hyödyntää enemmän. Seuraavana askeleena restonomin työharjoittelua voisi integroida työn opinnollistamisen avulla esimerkiksi palvelumuotoiluun tai projekti- ja johtajuusopintoihin. The purpose of the thesis was to study the internship practices in hospitality management at JAMK University of Applied Sciences. It was also studied if the methods of studification work could increase the students’ interest in the internship and thus develop the business. The research was carried out multi-methodically; two qualitative and one quantitative research methods were used. The data was collected by group interviews to the students, phone interviews to the employers and an online survey to the students. The research was focused on the tools of studification of work, recognition of prior learning, setting the goals, reporting and making the development assignment successful. According to the results, some tools of studification of work were already used in the internship in hospitality management, such as accreditation of the internship and development tasks. Recognition of prior learning was used in job interviews and defining tasks. Setting the goal and reporting should be further developed because the students liked to have more targets and responsibility in the internship. The employers considered that the reporting of the internship and setting the goals were practices that improved the internship. Conducting a development assignment or project, should be a part of the internship, which makes the internship motivating, inspiring and improving both to the student and the employer. Improvements of the internship practices were obtained from the students and employers by the research. The studies of hospitality management at a university of applied sciences require more work-based studies. Tools of studification of work exist and they should be more utilized. The next step would be integrating the service design process or management and project studies with the internship, using studification of work.
