Tiivistelmä
I Finland slaktas ca 300 000 nöt årligen och från slakten frigörs en del slaggprodukter som inte hör till livsmedelsindustrin. Till dessa hör bl.a. huden som dras av. De flesta vet inte i hurudan utsträckning nöthuden används runt om i världen. Huden som en lyxvara dock i rå saltat format har ett nämnvärt högt värde. Att priset per kg under några tillfällen under 8090 talet steg över nötköttets pris, är många säkert ovetande om.
Kvaliteten på hudarna är det väsentliga när det gäller ekonomin. Den finska nöthuden har en olik rykte än de andra nordiska ursprungen ute på hudmarknaden. I detta arbete har jag som avsikt att se om möjligheterna huruvida kvalitén skulle kunna höjas genom förbättringar hos alla enskilda fas från ladugård till färdigt saltade hudar på pall. En förbättring skulle höja kvalitén samt antalet felfria hud. Arbetet begrundar sig på information som jag samlat upp från olika pålitliga källor samt min egen erfarenhet.
Informationen har analyserats och dels testats i teori för att få et pålitligt och sanningsbaserad resultat.
Betydelsen av kvalitén är allt, för oss som exporterar och presenterar de finska nöthudarna runt om i världen. För att vi skall uppnå en jämn kvalité bör hela kedjan i Finland förbättra sig. Antalet felfria hud bör fås ner. En förbättring måste ske från alla parter. Med mindre smutsiga hudar, färre skador samt bättre avdragna och konserverade hudar höjs antalet felfria på sikt.
Ryktet sprider sig snabbt och tenderar vanligtvis också influera prisen när alla frågar efter samma material. En prisförhöjning på sikt för de finska hudarna skulle säker ge möjlighet till bonus eller annan form av likvid även till uppfödarna. Mycket beror på hur slakterierna skulle agera och ifall det finns tillräckligt med slaktdjur i framtiden. En kompensering till uppfödarna för hudarna skulle kunna höja slaktmängden ifall priset på kött kommer att hållas på samma nivå även i framtiden. Personligen anser jag att arbetet kan stå som grund för t.ex. ett program om hudens kvalitets förbättring för slakterierna. Approximately 300,000 cattle are slaughtered each year in Finland. There arise a lot of byproducts which are not suitable for the food-industry. One of these products is the hide or skin which is pulled away from the body. People usually don’t realize how many cattle hides are used in the world. The luxurious products made from hides, makes the cattle hide valuable already in its raw state. During the mid-80´s and the beginning of the 90´s the price of cattle hides increased above the price of cattle meat.
Concerning the economic situation, the quality of the hides is the main thing. Finnish cattle hide has a different reputation than other Scandinavian hides on the export market. The aim of this thesis is to clarify: How to improve the hide’s quality and to try to bring together all part and stages of the beef meet production; in order to improve quality. There are many different things which must be considered from the barn to the slaughterhouse and finally to the ready salted hides for the tanning industry.
Improvements would give better quality hides and less damaged ones. The thesis examines knowledge from my own experiences and information which I have collected from reliable sources. The information has been analyzed and also verified in real life to obtain a reliable conclusion. The importance of quality is everything for those who export and represent Finnish hides around the world. To achieve a good level of quality all parts in the Finnish meat producing chain must be improved. With less dung on the hides, less cuts, better pulling off and salting, the amount of damage free hides will increase with time.
Good and popular hides will also have an influence on the price. An increase in the price would surely give room for some kind of bonus for the farmers also, depending on how the slaughterhouses would react and if they have enough livestock to buy. Giving compensation to the farmers for the quality of the hides could increase the livestock and kill rate. This way we could help cover the low price given to the farmers for meat.
