Tiivistelmä
Detta lärdomsprov gjordes på uppdrag av matbutiken Anton & Anton i Borgå, för att utreda om det finns lämpliga lösningar på Borgåbutikens logistiska problem. Företaget värdesätter grön- och hållbar logistik, samt vill få människor att uppskatta inhemsk- och närproducerad mat. Syftet var att undersöka hur företagets logistik fungerar idag, för att på basen av det kunna framföra förändringsförslag.
Huvudproblemet ligger i transporten av livsmedel. Utredningen förverkligades kvalitativt i form av intervjuer med Anton & Antons verkställande direktör, samt observationer angående lagerhållningen i affären, under augusti 2010.
Kontexten innehåller en presentation av livsmedelsbranschen, ekologiskt lantbruk, närproduktion samt företaget Anton & Anton. I teoridelen introduceras logistik, som är ett nyare kunskapsområde jämfört med andra vetenskapliga discipliner inom en organisation. Logistikkapitlet är avgränsat enligt vad som är relevant för Anton & Anton och undersökningen.
Av resultaten framkom att matbutikens logistik idag är komplex. Detta bl.a. för att man köper in varor från många olika producenter som är geografiskt utspridda, små kvantiteter, och det finns inte bestämda tider för leverans. En ägare på Anton & Anton kör varje vecka en runda och hämtar produkter från flera ställen, men detta kunde man lämna till en utomstående aktör. Man kunde även implementera ett ERP-system för att underlätta kommunikation samt dokumentering inom företaget. This thesis was commissioned by Anton & Anton, a small food shop in Porvoo. The company values green and sustainable logistics, and want to get people to appreciate indigenous and locally produced food. The purpose of this study was to look into the operations of Anton & Anton’s logistics today, and based on that make proposals for changes.
The main research problem concerns the transport of goods. The study was carried out using qualitative methods in form of interviews with the executive director of Anton & Anton, and observations of the store’s inventory management.
The theoretical framework comprises a presentation of the food industry, organic agriculture, local production, and the target company Anton & Anton. The theory part introduces logistics, which is a newer branch of knowledge compared to other scientific disciplines within an organization. The chapter on logistics is narrowed down according to what is relevant for Anton & Anton and the survey.
The findings indicate that the food shop’s logistics today is a complex matter. This is because products of small quantities are purchased from many different and geographically dispersed producers, and the fact that there are no fixed times for delivery. Today, one of the owners of Anton & Anton runs a weekly round and picks up goods from several manufacturers, but instead a third party could take over this function. An ERP system could also be implemented to facilitate communications and documentation within the company.
